The name is a wink – the cuisine is serious.
At Staderer, culinary ambition meets casual design – with views of the old town and a terrace right on the Altmühl river.

From March 1, 2026, multi-award-winning Michelin-starred chef Benjamin Schöneich will take over as head chef, offering classic French cuisine with subtle influences from around the world – precise, elegant, and expressive.
The menu: seasonally inspired, finely composed, and thoughtfully crafted down to the last detail.
The wine list: deep, curated, featuring classics and rare finds from Germany, France, and Italy.
Our Tip: Wednesday to Saturday evenings – with reservation.

By his side: Katharina Ricken, sous-chef, with a fine instinct for ingredients, techniques, and team leadership. With her, everything runs smoothly behind the scenes.

André Sieber, Pastry Chef of the Year 2024, stands for refined, stylish, and surprising dessert creations – never too much, always precisely on point.

Julian Wiest, chef de partie, thinks holistically: seasonal, sustainable, nose to tail.

Cristian Sava, kitchen assistant with a passion for BBQ, brings structure, energy, and good vibes to the heart of the kitchen.
